Santi Taura began his professional training in 1990 at the I.F.P. Fray Junipero Serra in Palma de Mallorca.

He subsequently worked in various restaurants and hotels on the island, where he was able to absorb and learn a great deal of how the trade operates and each establishment and team have contributed to creating Santi’s own personality, which he finally reflected in his own restaurant, SANTI TAURA, which opened in June 2003.

In February 2016, Santi opens DINS, a very personal restaurant, with the freedom to cook any ingredient or recipe of the islands and highlight the classic Mallorcan recipe book, the local products and the historical memory of the Balearic Islands.

In 2019, he brings together these two highly personal concepts under the name of DINS SANTI TAURA and moves them to Palma, specifically in the old Jewish quarter of La Calatrava, where the culinary history of Santi Taura will take on another meaning.
